Large lipid droplets combine with bile salts by the process of emulsification to form smaller lipid droplets. This is because it provides a larger surface area for lipase to work on. The lipase hydrolyses the triglycerides up into monoglycerides and fatty acids, these structures are small enough to diffuse across the epithelial cell membrane. Monoglycerides and fatty acids diffuse into the epithelial cells and reform triglycerides. Rough endoplasmic reticulum synthesises proteins and these are modified and packaged into vesicles by the Golgi along with the triglycerides forming chylomicrons. The chylomicrons prevent blockages and globules of fat that could block the lymphatic system. Chylomicrons leave the cell by exocytosis and enter the lymphatic system and drains into the blood and an enzyme breaks the triglycerides into monoglycerides and fatty acids, so they are small enough to diffuse into cells.
