The questionnaires used in sensory evaluations will either be; Consumer Acceptance, Descriptive or Discrimination tests. Foods are evaluated on their appearance, odour, texture and taste (BNF, 2017). In a sensory evaluation, these factors can be assessed in a food to; compare similarities or differences between products, analyse products for possible improvements and gain an understanding of responses to products (tolerable or intolerable). Sensory evaluations also assess whether a type of food meets its individual specifications and deliver quantitative or qualitative feedback to companies in need of opinions, in order for decisions to be made to further develop a product.
