All enzymes have an active site where substrates can bind, undergo chemical change and become products and these active sites are usually substrate specific (binding only to specific substrates). Since enzymes are in biological organisms, there are usually optimal conditions within the organism’ environment that indicate the role and function of an enzyme. Certain factors such as temperature, pH, substrate concentration, enzyme concentration, allosteric inhibitors or activators etc. all affect enzyme activity. In this experiment, the effects of various pH and enzyme concentrations are compared and analysed to see how they influence the enzyme activity of rennin.
