Enzymes are biological catalysts that can help to speed up the rate of a reaction by lowering the activation energy, providing an alternative route for the reaction. Rennin is an enzyme that can be found in the stomach of young cud-chewing animals such as cows and sheep. Its role is to curdle milk, which helps to extend the period where the milk can be retained in the stomach and thus make digestion of milk proteins more efficient. Without rennin, the coagulation of milk will too slow for efficient nutrient absorption. A commercial form of rennin is found in the form of rennet, which is mostly used in the manufacturing of cheese. Rennet is made from a combination of enzymes, but the primary active enzyme is rennin – usually making up 90% of the compound. Enzyme activity can be affected by a few factors. In this experiment, the effect of concentration of the enzyme on the rate of the reaction will be tested.
